Ingredients For This Recipe
- 4 cups old fashioned rolled oats
- 1 cup Goji berries
- 1/2 cup chopped walnuts
- 1/4 cup cocoa powder
- 1/2 tsp sea salt
- 1 tsp cinnamon
- 1/2 cup coconut oil
- 1/2 cup maple syrup
- 1 tsp vanilla

How To Make This Recipe
Step 1: Preheat oven to 325°F (163°C) and line a large baking sheet with parchment paper.
Step 2: Mix the oats, Goji berries, walnuts, cocoa powder, sea salt, and cinnamon in a large bowl. Mix it all up so that all of the ingredients are evenly mixed up and covered with the cocoa powder.

Step 3: In a separate bowl, melt the coconut oil and then add the maple syrup, and vanilla. Pour over the oat mixture and stir well until there are no dry pockets of oats or ingredients.

Step 4: Spread the granola evenly onto the baking sheet, pressing it down gently to help create clusters.

Step 5: Bake for 25 minutes until lightly toasted. Check on the granola after about 20 minutes. If it is light and golden, take it out of the oven. Do not overbake.
Step 6: Let the granola cool completely before breaking it into pieces. Store the granola in an airtight container.

How To Get Granola Clumps
Press the granola mixture firmly into an even layer on the baking sheet before baking. Let it cool completely after baking, then break it into clusters instead of stirring right away. This helps the oats stick together and creates those delicious crunchy pieces. Do not overbake the granola, as it can become dry and lose its crunchy clusters.
Tips For Making Chocolate Goji Berry Granola
For the best crunchy clusters, spread the granola into an even layer on the baking sheet and let it cool completely before stirring. If you like extra crunch, gently press the mixture down with the back of a spoon before baking. Store the cooled granola in an airtight container at room temperature to keep it fresh and crisp. You can also add your favorite mix ins after baking and cooling so they keep their texture and flavor.

Frequently Asked Questions
What is the best coconut oil to use?
I use Viva Naturals coconut oil for this recipe because it is pure, melts really well, and adds a delicious coconut flavor that pairs beautifully with the cocoa and goji berries. The smooth texture makes it easy to mix with the maple syrup and evenly coat the oats before baking. A good quality coconut oil helps bring out the rich flavors in this homemade granola while creating a crisp, golden texture.
How do I keep homemade granola crunchy?
Let the granola cool completely before storing it because it continues to firm up as it cools. Store it in an airtight container at room temperature to help maintain its texture. Adding the goji berries after baking also helps keep the dried fruit from becoming too chewy.
Can I make this granola less sweet?
Yes, you can reduce the maple syrup slightly if you prefer a less sweet granola. Keep in mind that the maple syrup helps the oats brown and form clusters, so a large reduction may change the texture. You can also add extra nuts or seeds to balance the flavor.
Can I add chocolate chips to this chocolate granola?
Yes, chocolate chips are a great addition to this recipe. Stir them in after the granola has cooled so they keep their shape and don’t melt into the mixture. Dark chocolate chips pair especially well with the cocoa powder and goji berries.
How long does homemade granola last?
Homemade granola can stay fresh for about 2 weeks when stored in an airtight container at room temperature. Make sure the granola is completely cool before storing it so moisture does not build up in the container. You can also freeze granola in a sealed container for longer storage.
Recipe Variations
- Dark chocolate chips, cacao nibs, or chopped chocolate.
- Chopped almonds, pecans, walnuts, or cashews for extra crunch and texture.
- Unsweetened coconut flakes, toasted coconut, or coconut chips.
- Pumpkin seeds, sunflower seeds, or hemp hearts.
- Dried cherries, cranberries, apricots, or raisins for a fruit variation.
- A pinch of cayenne pepper for a warm spiced chocolate flavor
- Almond butter, peanut butter, or cashew butter mixed with the wet ingredients.
