- 2 large eggs
- 1/4 cup melted butter
- 2 tsp real vanilla
- 3 cups blueberries (2 cups roughly chopped for recipe & 1 cup whole for the topping)
Instructions for Baked Blueberry Oatmeal
- Preheat your oven to 375°F.
- In a medium mixing bowl combine the oats, allspice, baking powder, sea salt. Stir until they are all incorporated.
- In a smaller mixing bowl whisk together the milk, maple syrup, eggs, butter and vanilla.
- Combine the oat mixture and wet ingredients. Stir it just until mixed, do not over stir. It’s ok to have pockets of the dry ingredients.
- In a greased 9×9 pan, arrange 2 cups of roughly chopped blueberries on the bottom so that they are evenly dispersed.
- Pour over the oat mixture and pat down so that everything is even in the pan.
- Put the rest of the blueberries on top.
- Bake for about 40 minutes. Check on it at about 30 minutes. You will know when it’s done when it is lightly golden.
