1 1/4 cup milk

2 large eggs

1/3 cup maple syrup or honey

1/2 cup pecans

1/2 cup dried cranberries

  1. Preheat oven to 350°F.
  2. In a medium bowl, combine the oats, pumpkin spice, baking powder and salt. Mix really well to combine.
  3. Add in the pumpkin puree, milk, eggs, vanilla & maple syrup.
  4. Fold in the pecans and dried cranberries.
  5. Pour the pumpkin mixture into a 9×11 (or whatever you have) oven safe pan that has been greased with the butter. Add more pecans and cranberries to the top if you like.
  6. Bake for about 30-35 minutes. The pumpkin baked oatmeal is done when it is completely set in the middle.
